Peanut Butter Cookie Dough Cupcakes are simply
amazing. I don't normally eat my baking, but I HAD to have one
of these. I made them for a huge group of teen guys and everyone loved
them. The cupcake and the frosting is homemade.
This makes makes around 12 cupcakes:
1/4 cup butter (softened to room temperature)
1/2 cup creamy peanut butter
1 cup sugar
2 whole eggs
1 and 1/2 cups flour
1 1/4 teaspoon baking powder
1/3 cup milk
3/4 cup peanut butter
1/2 bag of chocolate chips.
Preheat oven to 350 degrees F.
Cream butter and peanut butter together in the bowl until smooth
and creamy. Add half of the dry ingredients, and then mix together. Add
the milk. Once mixed, add remaining dry ingredients and mix completely.
Pour into cupcake tins and fill 2/3 of the way full. Bake for 15-20
minutes at 350. Let cool, then frost!
1/2 cup. Peanut Butter
1/4 cup and 2 Tbsp Butter (softened to room temperature)
1/4 cup and 2 Tbsp. Flour
1/4 cup and 2 Tbsp. Brown Sugar
2 cups Powdered Sugar
1/3 cup of Reese's Pieces
1/4 cup chocolate chips
Add all of the ingredients together, but the powdered sugar, chocolate chips, and Reese's Pieces. Mix together thoroughly. Add 1/4 cup of powdered sugar at a time and mix in between. Next add the chocolate chips and Reese's Pieces. Stir and then frost. I stored my cupcakes in the fridge for a more cookie dough feel to it.
